Golden Berry Margarita


serves 8

2 cups Sun Belle golden berries
1/4 Cup water
1 cup granulated sugar
1-1/2 cup Tequila
1-1/2 cup club soda
2 tablespoons Grand Marnier
2 tablespoons white sparkling sugar
1/2 teaspoon kosher salt
1/8 teaspoon ground red pepper (cayenne)
1 lime wedge
Ice cubes


Prepare 8 margarita glasses by moistening their rims with the lime wedge and turning the rims on a saucer in which you have mixed together the white sparkling sugar, kosher salt and ground red pepper.

Crush 1 1/2 cups of the Sun Belle golden berries and put them in a saucepan with the water and granulated sugar. Bring to a boil, cover and cook over low heat for 15 minutes. Strain this syrup and let is cool. Stir in lime juice.

Combine golden berry syrup, tequila, soda, and Grand Marnier in a large pitcher.

Place ice cubes in each glass, pour in margarita mix and garnish each glass with remaining golden berries.
