Sun Belle Colored Bell Peppers

Greenhouse bell peppers are uniformly colored and shaped, shiny and crunchy when eaten raw. Colored bell peppers have more complicated sets of antioxidants, including betacarotene and lycopene, than do green peppers.

- Try this at home. Roasting a pepper on a meat fork over an open flame until it is blackened. Place the pepper in a paper bag for 30 minutes. Scrape the charred skin and slice into strips for a delicious savory snack, to dress up an antipasti spread or to accompany meat.
