Sun Belle Belgian Endive

The jewel of Brabant, Belgian endive is a chicory variety discovered in 1830 in Brussels which is rich in fiber, low in calories, tart and crisp in salads and snacks and delicious in casseroles. This firm white lettuce, with a tinge of yellow at its edge, is grown from chicory roots without light. Belgian endive, which is packed in opaque paper or blue plastic, should be kept away from light - otherwise it turns green and loses its unique flavor and crispness.
