Arugula salad with mixed berries, goat cheese and poppy seed dressing


serves 2

2 tablespoons cider vinegar
½ teaspoon granulated sugar
1/3 teaspoon poppy seeds
1 teaspoon kosher salt
¼ teaspoon fresh black pepper
2 tablespoons olive oil

Salad: 2 ½ cups fresh baby arugula
1 cup of berries: blueberries, raspberries and blackberries
2 oz. fresh goat cheese


1. In a jar with a tight –fitting lid such as an 8 oz. mason jar, combine all the ingredients for the dressing. Shake the jar vigorously, until the dressing emulsifies.

2. In a small bowl, toss the arugula with the dressing so that it lightly coats the leaves.

3. Divide the arugula with dressing into 2 serving bowls and top each with half of the berries and half of the goat cheese.

4. Drizzle a small amount of dressing over the top of each bowl and enjoy a refreshingly healthy salad.
