Golden Berry Spring Popsicle Dessert


serves approx. 4

6 oz. Sun Belle Golden Berries
2-3 tablespoons sugar
1-1/2 tablespoons lime juice
1-teaspoon lime zest
1/2cup unsweetened coconut flakes
Pinch of kosher salt
Optional: 2 fresh limes for garnish


1. Slice the golden berries in half and combine with the sugar and lime in a bowl. Gently mix ingredients and allow marinating for 25 minutes with occasional stirring.

2. In a food processor or blender combine the golden berry mixture, lime zest and kosher salt and coconut flakes. Pulse until smooth.

3. Pour into popsicle molds or small glasses (add popsicle sticks when they begin to freeze)

4. When frozen, carefully pull popsicles out of mold or glass by the popsicle stick

Tip: Garnish serving dish with remaining golden berries and a slice of lime.
