Snap Peas
Grown in Guatemala and Peru for Sun Belle, stringless sugar snap peas are a very easy and festive vegetable to prepare. Because of their crunch, flavor and complexity (eating the peas and the pod!), they are a hit with adults and children alike. The key is not to overcook sugar snap peas. Parboil them for just a few minutes and then cool them down so they retain their bright color and crunch. They can be eaten as is or slightly buttered and sauced. For a special treat serve sugar snap peas with pesto.
